isedas-0400In nature we can find three types of dyes, chlorine, terpenoids and phenolic compounds or polyphenols, the latter being responsible for the color of the wine.
Within this group, the most relevant compounds are the anthocyanins - responsible for the red-blue color - and the avanoles - responsible for the yellow color.
During one of the classes of Sensory Analysis Professor Antonio Palacios said:
"Wine is born and dies as a human being. Since everyone, both wine and we are born from reduction and we die completely rusty. "
Oxygen burns us little by little. Of course, this does not
makes exception with the wine, hence the very old wines have lost the color of their youth, giving way to brown and with a veiled appearance. The grapes most representative of their colors are:
Malbec = Blue
Cabernet = red
Merlot = brown
Syrah = Violets
And so they go, depending on the area, the years of oak and the strategy of the oenologist who made the wine.
These pieces are tinted with wine, anilines, charcoal and in some cases, wax or gutta. The quality and durability of the colors is guaranteed, although in the case of living materials, the color will be colored over time.
